Arisi Kanji


Ingredients

Boiled rice - 1 cup
Cumin powder - 1/2 tsp
Salt - as needed

Method

1. Heat a frying pan.
2. Add rice, fry till red and powder coarsely.
3. Pressure cook rice with 4 cups of water.
4. Remove the cooked rice, add salt, cumin powder, mix well and serve.

Unakkalari Kanji


Ingredients

Raw Rice - 1 cup
Coconut - 2
cumin seeds - 1/2 tsp
Salt - to taste

Method

1. Wash rice and set aside.
2. Grate coconut and extract, thick and thin coconut milk.
3. Boil the thin coconut milk in a thick bottomed vessel.
4. Add rice and cook.
5. When rice is half cooked, add salt and stir well.
6. When the rice is 3/4 cooked, add thick coconut milk and crushed cumin.
7. Stir continously till the rice is cooked and oil floats above.
8. Switch off the stove, transfer the contents to a plate.
9. Cut into pieces when cool and serve with jaggery syrup.
